The 2016 Chablis 1er Cru Butteaux has a slightly muted bouquet, quite stony and reserved, as a result of its undergoing a cold stabilization at the time of tasting. The palate is fresh with lime, Golden Delicious apple and saline notes, with a fine thread of acidity and a light twist of sour lemon toward the finish that conveys fine mineralité. This should turn into a fine, quite earthy Butteaux.

(38 hectoliters per hectare produced): Pale, bright, green-tinged yellow. Sexy aromas of white peach, spices and forest floor. Round, pliant and silky, showing less tension than the Forêts but enough acidity to frame and carry the slightly exotic mandarin orange fruit. Can't quite match the Forêts for precision or complexity.
Once again there is ample mineral reduction character present on the ripe yet cool aromas of sea breeze, essence of pear and plenty of floral elements. As is usually the case there is a bit more mid-palate volume and power to the medium-bodied flavors that possess a sleek muscularity on the drier, longer and decidedly more complex finale. While this should be approachable young, it should also reward a few years of development potential.
