The 2016 Chablis 1Er Cru les Forets has a pure and refined bouquet, quite floral in style with subtle lime and green apple scents. The palate has a crisp, slightly pithy entry. Not the most complex of premier crus, which is no surprise given that this is les Forets, but it conveys a sense of elegance if not quite the body and depth of the 2015.
Pale yellow with a green tinge. Subdued aromas of lime and white flowers. Open on entry, then juicy and pliant in the middle; seems a bit light but shows good tension and firmness, not to mention soil salinity and length, on the back end. A fairly serious Forêts for the vintage and for this estate; Cameron noted that the youngest vines here are now 20 years old.
Domaine Servin is one of the largest and oldest domain in Chablis, with its establishment since 1547, run by the current 7th generation of the family, Mr. Francois SERVIN - the owner & winemaker. This ownership covers 42 hectares of vineyards on kimmeridgian limestone-clay soils of tiny oyster shells with an average vine age of 40 years. 90% of the productions are exported to 28 countries well around the world.
Servin Chablis 1er Cru 'Les Forets', is lesser known 1er Cru, which is under a better-known umbrella name 'Montmains'. 100% stainless steel fermetation and maturation. MLF performed.
Pale yellow colour. The first nose is fresh with a mineral start following by slightly smoky and fresh cut grass aromas. The second nose dominated by citrus fruits with peeled orange skin and spices. The mouth is rich and round, one find again the minerality. Excellent structure and classic Chablis.
Pair with white fish, seafood with rich creamy sauce.
