The 2016 Chablis 1Er Cru Vaillons was bottled two weeks previous to my visit, after maturation entirely in tank. This was cropped at 53 hectoliters per hectare—quite decent considering the hail and frost. It has a pretty, quite elegant bouquet that is well defined with subtle sea spray/cockle shed notes emerging from the glass. The palate is dominated by white citrus fruit, segueing into quite an earthy finish.

(50 hectoliters per hectare produced): Pale, green-tinged yellow. Vibrant aromas and flavors of lemon, lime zest, stone and mint. A densely packed Vaillons offering an attractive balance of fruit sweetness and energy. Finishes stony, firm and persistent. Servin's Vaillons vines are in what Marc Cameron described as "a fragile area, where people often need to pick early due to botrytis." But he added that rot was not an issue here for this estate in 2016.
Domaine Servin is one of the largest and oldest domain in Chablis, with its establishment since 1547, run by the current 7th generation of the family, Mr. Francois SERVIN - the owner & winemaker. This ownership covers 42 hectares of vineyards on kimmeridgian limestone-clay soils of tiny oyster shells with an average vine age of 40 years. 90% of the productions are exported to 28 countries well around the world.
Rich golden yellow colour. This is flinty, showing mineral elements combining with apple and citrus notes, all playing off a vivid acidity. Features a creamy texture, fine harmony and a lingering aftertaste of fruit, earth and stone.
