The 2015 Chablis Vieilles Vignes Selection Massale comes from 100% un-cloned vines inside Les Pargues. It has a very engaging bouquet with scents of fresh pear, cooking apple and light gravel aromas that are very well defined. The palate is also very well defined, with hints of white peach and touches of hazelnut. This is harmonious and saline, nicely focused with a touch of spice on the finish. Certainly in this vintage there exists a gap between the regular Les Pargues and this old vine bottling.
Floral, apple and earth notes mark this fresh white. A hint of stone lines the finish.
(70% aging in tank and 30% in older barrels): Deep stone fruit aromas lifted by ginger and lime. Broad and dry in the mouth, with healthy acidity tightening the flavors of ripe peach, pineapple, ginger and lichee. Finishes with subtle mounting length and dusty grip. Less generous than the Pargues but in a classic Chablis way: I might have mistaken this for a 2014.
Domaine Servin is one of the largest and oldest domain in Chablis, with its establishment since 1547, run by the current 7th generation of the family, Mr. Francois SERVIN - the owner & winemaker. This ownership covers 42 hectares of vineyards on kimmeridgian limestone-clay soils of tiny oyster shells with an average vine age of 40 years. 90% of the productions are exported to 28 countries well around the world.
Servin Chablis 'Vieilles Vignes Massale' AOC, with its special designation indicating that this wine is made of very old vine of 50 years, uncloned. It naturally produces tiny yields of concentrated juice (35hl/ha). Grapes are manually harvested on a hilly slop of south-west facing. 50:50 percent usage of stainless steel and 3-9 year old burgundian oak for fermenting and ageing. MLF performed.
Medium yellow colour. Fresh and powerful aromas of yellow fruits mix with intergrated oak. Complex in mouth and moderate finish.
Pair with seafood, shell fish, poultry with sauce.
