The 63 hectares of Santomè vineyards are all in the province of Treviso – home of Prosecco – and 27 of them are dedicated exclusively to the production of 3 different types of Prosecco.
100% Pinot Noir grapes are mechanically harvested. and fermented in Stainless steel tanks with no MLF. Yeast is added to allow second fermentation in a pressurized tanks "Charmat method" to create bubbles. Residual sugar level of 8g/L. Sofe pink colour with steady bubbles. Fresh and delicate fragrance, rich in fruit sensaions, such as apple, peach, strawberries with hints of roses. Elegant and pungent on the palate with balanced acidity. A fresh and dry aftertaste.
Pair with seafood salad, shellfish, spicy fish soups, quiches or raw hams.
